Our Boozy Christmas Cake is a take on a Christmassy classic. This rich, fruity cake is full of the best of the season, with gently toasted nuts and booze drenched fruits and berries.
Our signature drunken sloes were harvested in early autumn from the fields and hedgerows of our farm and ‘bletted’ with a blast in the freezer to release the sugars. We then drench them in booze and leave to steep before folding through our buttery spiced cake mix.
Raw wildflower honey adds a little extra complexity and sets off the warm, wintery flavours of rum and brandy which our Wild Chefs have been diligently feeding the cakes in the run up to Christmas.
We love to serve this cake as part of an after dinner sharing board, its not entirely what you might expect but the deep, plummy flavours go beautifully with a salty Cornish cheddar!
