Wild Cornwall’s hero product, Blackberry Balsamic Vinegar, contains one of the most common wild edibles, the sweet blackberry. Our absolute favourite of them all, this intensely fruity, deep and mysterious vinegar is tart and sweet, yet the juicy berries complement the balsamic in which they are gently mulled for your pleasure. Fabulous with duck or game; try drizzling it over strawberries and ice-cream!
Abundantly found throughout the UK in hedgerows, the leaves are ready to be foraged in late spring to early summer, however you’ll have to wait a little longer in order to pick the juicy berries, in late summer to early autumn. At Wild Cornwall, the hedges separating fields full of oil seed crops are dominated by blackberries. Picked carefully by a small team of foragers, they’re taken back to the Wild Kitchen, where a rich blackberry puree is created.
Blackberries are an incredibly rich source of the antioxidant, anthocyanins. There is evidence that anthocyanins can lower blood pressure, reduce the risk of heart disease and many more. You can also thank anthocyanins for the deep purple colour blackberries possess. A serving of approximately 10 blackberries, is enough to be considered 1 of your 5 a day.
