If you’re anything like us and have trees full of apples, have been gifted apples or have some apples that need using up, give this Autumn Apple Chicken recipe a try. With a scent that is to die for, the flavour and smell will transport you to the heart of autumn.
Here’s what you’ll need:
- 1 tablespoon of oil
- 8 chicken thighs
- ¼ teaspoon of salt & pepper
- 3 medium apples, chopped
- 1 large onion, chopped
- 1 garlic clove, minced
- 80ml of BBQ Sauce
- 75ml of cider
- 1 tablespoon of honey
In a large pan/skillet, heat the oil over a medium heat. Brown the chicken thighs on both sides, then add the salt and pepper. Once you have done that, transfer all to a slow cooker, then add the apples.
After you have done that return to the large pan, add the onion. Allow to cook for a few minutes, whilst stirring. Add the garlic and cook for a minute more. Stir in the BBQ Sauce, cider and honey. Increase the heat to medium-high. Allow to cook for a few minute whilst constantly stirring the BBQ sauce, cider and honey together.
Pour over the chicken and apples in the slow cooker, place on the cover and cook on a low temperature for 3½ to 4 hours.
After this amount of time everything should be cooked and the chicken will be nice and tender.
