Fancy trying our Wild Mushrooms with Hunter’s BBQ Sauce? You’ve come to the right place! Whilst this recipe will work with any wild mushrooms (forage with expert advice and care!) it is at its best with oyster mushrooms. If these are hard to forage in your area we strongly recommend buying an Oyster Mushroom Grow kit which will supply you with fun and fungus for years to come!
Ingredients:
- 350 Oyster Mushrooms
- ½ bottle Wild Cornwall Hunter’s BBQ Sauce
- To serve, a couple of spring onions, a brioche bun and a couple of slices of Davidstow cheddar.
- Pinch of Salt & Pepper
Method:
Preheat the oven to 200°C
Brush your mushrooms off with a mushroom or pastry brush, and place them in a tin or low sided bowl with enough breathing room for them not to get steamy and sweat in the oven.
Using two forks shred the mushrooms in opposing directions until they resemble pulled pork.
Drizzle in olive oil and salt and pepper, toss and roast for around 20 minutes until the edges start to brown.
Empty a half a bottle of Wild Cornwall BBQ glaze into the tin or bowl and combine, then pop back in the oven for a further 10 minutes.
To serve, mix through a few chopped spring onions and stuff into a brioche bun with a little Davidstow cheddar. Consume immediately and messily.
