July’s Best Dressed (Salads)

What’s hot and what’s not in the world of dressing (salads)…

Worst Salad crimes: boring, wilty, unimaginatively dressed.

Top Salad goals: textural, filling, popping with flavour.

The best dressings of 2022

Rose and Strawberry Red Wine Vinegar Dressing

This aromatic delight will take your salads to a whole new level with delicate rose and sweet strawberries balanced perfectly by the tart red wine vinegar.

50ml vinegar

50ml olive oil

1 tsp lemon juice

Heavenly on a salad of avocado, mozzarella, strawberries and torn basil. Top with a scattering of toasted almonds

Elderflower Apple Cider Vinegar Dressing

With fragrant elderflower and fruity apple cider vinegar the raw Trelonk honey glosses over any lingering acidity to create a silky sweet dressing you will want to lash over everything

50ml Apple Cider Vinegar

50ml olive oil

2 tsp raw Trelonk honey

1 tsp lemon juice

This dressing is perfect for salads made up of crunchy raw vegetables; Thai style carrot and white cabbage vibes become an impressive dish we would recommend serving alongside a crispy tempura fritter.

Blackberry Balsamic Vinegar

100ml of Blackberry Balsamic vinegar, reduced until half

The simplest of all the dressings, this fruity, velvety delight can create a masterpiece out of just a handful of fresh leaves. We love this intense reduction on wild strawberries and icecream or to really make a bruschetta pop.
